Dan’s Dan Dan Noodles, The Dish That’s Been Borrowing my Name!
Dan Dan Noodles were on the menu for Glen’s lunch this time. You can tell I haven’t got much of an ego because, despite having my name plastered all over the dish, I’ve somehow never actually made them before!
Another Asian-inspired lunch built around mince, but this time with a rich peanut sauce. Garlic, ginger, chilli, sugar and spring onions were the main flavours, giving it that lovely combination of savoury, spicy and slightly sweet.
I suppose the easiest way to describe it is an Asian cousin of bolognese. It certainly looks a bit like one! I quickly wok-fried the beef mince, added the peanut sauce and chilli flakes, then blanched some pak choy and boiled the egg noodles before bringing everything together.
Finished with spring onions and sesame seeds and that was lunch sorted.
Much quicker than a bolognese too, which frankly gives Dan Dan a considerable advantage!
