Freezer Raiding Twist on Steak and Eggs


It’s always a good weekend breakfast when you have steaks in the fridge that need using up.

I wanted to do something a little different from the usual steak and eggs, so after a rummage through the freezer I found an old bag of hash browns and thought I’d turn them into a sort of Spanish tortilla. Not remotely traditional, granted, but we move!

I cooked the hash browns in the oven for about 20 minutes to crisp them up slightly, then chopped them up and mixed them with four eggs and a little milk. Into a hot frying pan with a little butter, then left it alone to cook, occasionally checking around the edges to make sure the whole thing hadn’t welded itself permanently to the pan. Added some cheese, covered it for another few minutes and that was the tortilla sorted.

Then the moment of panic flipping the plate and pan over but quick relief as it flopped perfectly onto the plate. I then quickly seared the steak and added some salad leaves that had admittedly seen better days. Their primary purpose was less nutrition and more “please God, put something green on this plate”!

Really simple, but we both enjoyed it. Definitely more interesting than the steak, hash browns and fried eggs I could easily have gone with, sometimes breakfast deserves a little ambition.
