No Fuss, No Mayo, No Complaints
Complicated dishes arenβt always the best. Sometimes a crunchy, fresh slaw and a well-cooked chicken breast can give you just as much enjoyment as some 100-step Michelin-star creation!
Tonight I thinly sliced some red and Chinese cabbage, grated in some carrot and seasoned everything well with salt and pepper.
For the dressing, I mixed grated ginger, sesame oil, garlic, sugar, soy sauce and a little BBQ seasoning. Sounds slightly random with the BBQ seasoning but it actually worked really well!
I used the same BBQ seasoning on the chicken, marinating it with a little oil, lemon, salt and pepper. Then it was onto a raging-hot griddle pan for about 3 minutes each side, followed by a couple of minutes resting before slicing.
Piled the chicken over the crunchy slaw and that was dinner done. Although Iβm not entirely sure whether Iβm allowed to call it coleslaw when there isnβt half a jar of mayonnaise involved.
Simple, fresh and delicious. With all the soy, sesame and ginger going on, Iβd call it Japanese-inspired, even if Japan may not officially claim responsibility for it!
