Sydney Fishbowl Energy with an Indian Detour


If you mix one of those Fishbowl salad bowls everyone seems to love in Sydney with Indian flavours, you end up with what I made Glen for lunch!

A bit of a mishmash perhaps, but the flavours really worked. I started with a simple base of lettuce, pickled cucumber and fresh garden peas. Good quality peas with a little salt are seriously underrated in a salad, in my opinion! Added some carrot that I pickled alongside with the cucumber and some roasted cauliflower for a bit of char.

For the protein, I marinated some beef in masala seasoning, heavy on the garam masala and ground ginger, then quickly fried it so it stayed tender.

The thing that brought everything together was the dressing: yoghurt, masala spices and plenty of vinegar to cut through those warmer curry flavours and keep the whole thing fresh.

Not quite as hip as one of those $25 salad bowls you can buy in the city, but more than half the price and better tasting in my completely unbiased opinion!

Indian-inspired salad bowls. New vibe. Iโ€™m calling it.
