Sang Choy Bao 🇨🇳

One From The Regular Rotation

Another simple one tonight, and this is one we probably have two or three times a month because it’s so easy, only needs a handful of ingredients and always seems to hit the spot. Sang choy bao, or lettuce wraps, is also one of those rare favourites of mine that doesn’t somehow involve pasta, bread or rice, so we’ll call that a small nutritional victory!

There’s never really a strict recipe when I make this. As long as you’ve got a good base of hoisin, soy and sesame oil, the rest can basically be whatever needs using up in the fridge. Mince of some description, mushrooms, carrots, bamboo shoots, leftover veg, it all works.

Tonight’s version was pork mince with mushrooms, carrots, sweetcorn and spring onions. Everything went straight into the wok, then it was simply a case of separating some gem lettuce leaves and piling it all in. Toasted peanuts over the top for a bit of extra crunch and dinner was done.

Quick, tasty, relatively healthy and brilliant for clearing out the fridge. The only real challenge with sang choy bao is attempting to eat it with any dignity. There’s always one rogue bit of mince making a bid for freedom down your shirt.

Definitely one that’ll continue appearing on our dinner table again and again.
