Mongolian Beef 🇲🇳

Quick Wok, Quick Lunch

Quick lunch today, and I promise there was more sauce going on top after I took the photo!

Made an old favourite for Glen, Mongolian beef. It’s a fairly simple dish, but I think the main thing is having a decent wok that can cope with a properly high heat without everything welding itself to the bottom!

I started by velveting the beef, which sounds far posher than it actually is. It’s basically just coating the beef with a little cornflour before cooking, helping it stay juicy while also giving the sauce something to cling to. Gave the beef a quick sear in a screaming hot wok while some jasmine rice cooked and the snap peas steamed.

Then it was simply a case of bringing everything together with that classic sweet and savoury Mongolian-style sauce, finishing it off and serving over the rice.

Nothing groundbreaking, but a really tasty, easy lunch for Glen. I’ve made variations of this a few times now and it’s definitely one that’ll keep making its way back onto the menu.
