A New Midweek Regular
Nothing particularly fancy tonight, but then again, who knew an old-school meatloaf could take so well to an Asian makeover?
This was a simple pork meatloaf packed with garlic, ginger and spring onion, generously glazed with tonkatsu sauce and served alongside sesame greens and sweet potato mash.
Simple, comforting and just a little bit different. Proof that even humble meatloaf can put on something fabulous and reinvent itself.
It was one of those easy dinners that ended up tasting far better than the amount of effort involved would suggest.
And yes, I know the meatloaf looks a little dry in the photo, but I promise it wasn’t!
The ultimate review came from Glen, who has already requested I make it again. So this one has officially earned itself a place on the midweek regulars list.
Sometimes the simple ones are the keepers.
