French Classic with an Italian Twist
I first heard about Chicken VΓ©ronique on the Dish podcast when Tom Holland mentioned it as a family favourite. Given that Glen loves grapes, that was really all the encouragement I needed to give it a go.
Despite the rather fancy French name, it’s actually a surprisingly straightforward dish. Naturally, I couldn’t leave well enough alone and slightly bastardised it by serving it over a simple risotto. I’m not entirely sure what the French would make of me putting an Italian staple underneath one of their dishes, but international relations remain intact and, more importantly, it worked rather well.
The real standout was the sauce. Oven-roasted grapes with a dash of cream turned into this beautifully rich, slightly sweet sauce that was far better than I expected over the simple roasted chicken.
It took a little time to bring everything together, but nothing was particularly complicated. Definitely one of those dishes that looks and tastes rather impressive without requiring a nervous breakdown in the kitchen.
And most importantly, Glen approved.
