Chicken Waldorf Salad 🇺🇸


Waldorf, Fawlty Towers & a Little Nostalgia


Went a bit American with Glen’s lunch today and made a Waldorf salad, which will always remind me of watching Fawlty Towers with Mum and Dad. Thankfully, mine involved considerably less drama than Basil’s attempt!

I swapped the traditional leaves for kale but kept the classics: crisp apple, celery and walnuts, topped with simply seared chicken thighs. Finished it with a quick dressing of mayonnaise, Dijon, lemon juice, olive oil and honey. Fresh, crunchy, really simple, and a lovely little lunch with a side helping of memories.

Luckily these salads I’ve been making aren’t soggy and flat the next day for Glens lunches as we have invested in more Tupperware that keeps the dressing seperate and the salads more crisp than soggy the next day!
