Lazy Gyoza with Pickled Cabbage
Lazy dinner, but with just enough effort to make it feel like I actually cooked!
We had some shop-bought chicken gyozas in the fridge, which we’ve had before and always hit the spot when we want something quick that isn’t just throwing a pizza in the oven. We also had a few chicken tenderloins left over, so decided to bulk things out with those too.
To make it a little more interesting, I quickly pickled some shredded red cabbage with vinegar, chilli crisp and sugar and just left it to do its thing while everything else cooked. Thinly sliced some spring onions and got some sesame seeds ready for the top.
The gyozas only needed about 8 minutes steaming, so once they were done I threw everything together with the chicken and pickled cabbage. I mixed a little of the cabbage pickling liquid into some teriyaki sauce for a quick dressing, then finished it all with the spring onions and sesame seeds.
Really simple, really tasty and exactly what we wanted. I think I’ll always keep a packet of these in the fridge because they’re quick, easy and considerably less guilt-inducing than surrendering to pizza and chips!
