Birria Spring Rolls 🇲🇽


When Leftovers Come Back Better Dressed!


Leftovers are sometimes just meals thrown together because you don’t want to waste food. They don’t always make much sense, but they do the job. These leftovers, however, made perfect sense.

After making birria tacos the night before, we had some of the pulled beef and broth left in the fridge. I’ve seen quite a few pubs and restaurants doing cheeseburger spring rolls, so I thought, why not give the leftover birria the same treatment?

I picked up some spring roll wrappers and reheated the leftover broth, adding some fresh coriander and onion to brighten it back up. For the spring rolls, I kept things very much in the spirit of the tacos: birria beef, cheese, coriander and raw onion.

I rolled everything up tightly, using a little egg wash to seal the wrappers and prevent the entire operation from collapsing in the fryer. Then came the admittedly less healthy part: frying them in oil until beautifully golden and crispy.

And they were so good. Crack one open and you get that lovely cheese pull with the rich shredded beef inside, followed by a dunk into the leftover birria broth.

It turned what could have been a fairly ordinary leftovers dinner into something completely different, and absolutely nothing went to waste.

Now I fear I’ve opened a dangerous door because I’m going to start looking at every leftover meal and wondering, “Could I put this in a spring roll?”

And frankly, the answer is probably yes.
