Fish Burger 🇦🇺


Mum’s Fillet-O-Fish


Not quite the Golden Arches, but I think Mum would’ve approved, I’ll add a nod to Australia as I feel Fish Burgers are top notch here compared to the UK!

It’s not McDonald’s, but this one was inspired by one of Mum’s slightly unexpected favourites. She was never a huge McDonald’s fan, but whenever we were getting it as kids, or even as adults, she’d secretly pipe up with, “Oh, get me a Fillet-O-Fish.” So this was a little nod to her, although I suppose this whole blog is one in some way!

I had some basa fillets, so seasoned some breadcrumbs, gave the fish the usual egg-and-breadcrumb dredge and baked them in the oven for about 25 minutes until golden and crispy.

For the sauce, I made a very simple homemade tartare with chopped capers, mayo and a splash of vinegar. Then a quick salad of gem lettuce, red onion and olives, dressed with the rhubarb vinegar Glen and I picked up at the food festival a few months ago. Honestly, that vinegar is a game changer for salads. Sorry Mum, because she hated rhubarb, but I reckon she would’ve forgiven me once she saw the burger!

Nothing fancy, just a really nice dinner with a bit of meaning behind it. And considerably better than paying someone to Uber Eats me a McDonald’s.
