IKEA Night, Without Leaving the House!
Pork mince, potatoes and peas. There was really only one place this could go: homemade IKEA meatballs night.
We had some bacon that had seen better days, so I finely chopped it and mixed it through the pork mince with onion powder, garlic powder, salt and pepper. I rolled everything into little meatballs, gave them a light dusting of flour and pan-fried them to get those lovely crispy edges.
For the mash, I boiled the potatoes with garlic and, in an astonishing display of restraint, didn’t add any butter. Frankly, I barely recognised myself, but it was still really good. The peas were kept simple with plenty of seasoning and some fresh mint.
The gravy involved a little assistance from an actual IKEA gravy packet lurking in the cupboard, because sometimes authenticity comes powdered.
Then, instead of the traditional lingonberry, I added a spoonful of tomato and rhubarb chutney Glen and I picked up at the food festival in Sydney.
Not exactly what IKEA intended, but absolutely delicious and definitely one I’d make again.
