Quinoa Isnβt Completely Awful
Tonight was a lighter dinner and partly an exercise in using up what was already lurking in the fridge. We had some lettuce and spinach that needed using, and quinoa had somehow found its way onto the meal plan, so its moment had arrived.
I roasted some vegetables with olive oil and a splash of rhubarb vinegar we picked up at the Food & Wine Show, then cooked the quinoa with garlic and a few spices to give it a fighting chance. It gets a bit of a bad rap, and I’ve never been entirely convinced by it, but I have to admit it was much better than I expected.
The chicken was quickly seared, then everything was thrown together with the greens to make a really fresh, simple dinner for the two of us.
Glen loved it. I remain slightly suspicious of quinoa, but I’d happily eat it again, which I’m counting as progress!
