Slow Cooked Pork Rendang 🇮🇩


Curry for Glen, Coconut for Nobody Else!


I’m not the biggest curry guy, especially as coconut and I have never had the happiest of relationships, but I’ve been experimenting with a few different curry dishes for Glen’s lunches.

This week I went for an Indonesian-style pulled pork rendang. I slightly cheated with a good rendang paste, adding red onion, garlic and ginger before stirring through coconut milk and letting everything cook low and slow. Thankfully, the pork shoulder had already been slow-cooked, so there was no waiting twelve hours for lunch to finally materialise.

I kept the rice simple with jasmine rice, garlic and turmeric, then added pak choy towards the end of the rendang and finished it with a generous scattering of roasted peanuts.

Not entirely traditional, admittedly, but a very decent-looking lunch for Glen and another little curry experiment under my belt.
