Masala Mango Halloumi and Potato 🇮🇳


Indian Loaded Potatoes…Identity Crisis


Tonight was another one of those “I have an idea, let’s see where this goes” dinners. I’m still not entirely sure where it went, but Glen liked it, so that’s something.

I started with thinly sliced onions tossed with a little oil and seasoned flour, then baked until crispy for a sort of cheat’s onion bhaji situation. I also made a quick cucumber pickle with vinegar and sugar, then sliced potatoes into thick scallop-style rounds, tossed them with masala seasoning and garlic and roasted them until golden.

And then things got a little strange.

I mixed halloumi with tandoori seasoning and mango chutney, spooned the whole spicy, sweet, cheesy concoction over the potatoes for the last ten minutes and let everything get sticky and golden.

A couple of steaks were quickly pan-fried and rested before I piled everything together, finishing with the crispy onions, cucumber pickle and a simple yoghurt dressing.

Was it loaded fries? Not really. Was it Indian-inspired? Loosely. Was it my latest gastronomic invention? I don’t think so!

For me it landed firmly in the “interesting experiment, probably wouldn’t make it again” category. Glen, however, seemed to thoroughly enjoy it, so perhaps I’m being outvoted in my own kitchen.
