Fridge Raid: Nasi Goreng-ish Edition!
This was very much a use what we have lunch for Glen, which somehow turned itself into something loosely resembling nasi goreng. Traditional? Absolutely not. Tasty? Thankfully, yes.
I had some good nasi goreng paste in the cupboard, so after cooking some rice I threw together a quick stir-fry with broccoli stalks and florets, carrot, pak choy and coriander. Two lonely chicken tenderloins were quickly cooked and sliced over the top, followed by crispy shallots and, of course, a fried egg.
Now, please do not judge me for that egg. Glen hates a runny yolk, so despite it going against every fibre of my being, his eggs must be cooked until there is absolutely no possibility of yolk-related movement. The things we do for love.
For what was essentially a collection of leftovers and odds and ends from the fridge, it ended up looking rather impressive for lunch.
