A Little Satay Situation
We fancied a bit of a snack this weekend, and since Glen and I both love satay and Thai flavours, skewers seemed like a very sensible idea.
We had some chicken thighs to use up, and because I rarely get the chance to cook seafood with Glen not being its biggest fan, I seized my opportunity and bought myself some prawns.
I wonโt pretend I lovingly made the satay sauce from scratch. Life is short and perfectly decent sauces come in jars. ๐ I did give it a bit of help though, adding ginger, garlic, coriander stems, spring onion, lime juice and chilli flakes, before marinating the chicken and prawns for a few hours.
Then it was simply onto skewers, onto the griddle pan, and basted as they cooked until everything was sticky and nicely charred.
The prawns went slightly past where I wanted them, but they still tasted delicious. Not bad for a weekend snack that somehow became quite the little feast!
